I Miss Bread!

Right after Christmas I decided to go on the Wheat Belly diet.. I didn't buy the book but there is a blog that pretty much tells me everything that's in the book.  The diet is kind of a cross between the Atkins diet and South Beach.  I officially started last Saturday, Dec. 29th.

Coming off of the food fest that is Christmas in our family, starting this diet was not as difficult as I thought it would be. I was so sick of eating goodies and being full at every meal that it was almost a pleasure to give everything up!

And give everything up I did. No more bread, pasta, crackers, English muffins ( which I ate almost every morning on the way to work), cereal,  cookies, cake, candy. Being Italian, pasta and bread have been the staple of my diet practically my whole life!

However, here are some things I've discovered.

Brown rice cakes are a good substitute for bread. You can put anything on them from lunch meat to hummus.

A salad with just olive oil and pepper is really good!

I eat oatmeal two or three mornings a week, which is a no no on this diet but I can't eat eggs every morning. Yuck!

Spaghetti squash makes a good substitute for pasta but it's not always available and a PITA to prepare. Broccoli slaw works pretty good, also,  and is a heck of a lot easier. With my own homemade sauce it's not too shabby!

My blood sugar has been awesome! Under 100 every morning! My doctor is going to be so proud of me!

It says in the blog that eating wheat just makes you want to eat more wheat and I tend to believe it. I have had no problem eating my portions and being satisfied.

Fruit tastes very sweet when you haven't really had anything else sweet!

That no matter how motivated I can get with my diet I still suck at exercising!

That my family, friends and especially my husband are very supportive!

So that's been my focus lately. I lost 3 pounds the first week so I think that's a good start! My goal is to lose 25 pounds by the time I have to see my doctor for a diabetic check in March.

This time I really think I'm going to do it!

  1. Well, buddy, how great is that! I know you can do it although I didn't realize you wanted to lose weight or needed to. I believe the only thing I'd really miss is rice.

  2. Congratulations. I did Atkins for a while, and it was very successful, but I did so miss the carbs. I just don't think I am a strong enough person to give up all gluten. Life is so short as it is.

  3. Can you use flax bread? I use Bob's Redmill flax meal to made bread, pancakes, crackers, pizza and more. It's REALLY (almost no) carb and stocked with protein and omegas. To make the crackers just mix the flax meal with water until it forms a "dough". I add salt, pepper, onion and garlic powder. Once I made it with raisins, sugar and rosemary. Bake for 30-40 mins at 400. So easy and so good! I almost never eat bread these days...

  5. I was just reading about The Wheat Belly Diet last week and wondered what it was all about. I'm impressed that you're giving it a try. Keep us posted, please! I'm curious as to whether the book's author is right about our wheat.
