This is the salad I usually get when we got to a restaurant by our house called The Honey Tree.
It's called a Melinzana Salad. Its romaine lettuce, grilled eggplant, roasted red peppers, kalamata olives, tomatoes and feta cheese. Topped with a balsamic dressing. Yummy!

Oh my gosh that looks delicious!! I want to do more with eggplant. I may have to look for a recipe for roasted eggplant! A week ago we made flounder with spinach and roasted red peppers. It was so good! And then we had some of the spinach and roasted red peppers leftover and some leftover plain spaghetti noodles from another day so we put the two together and cooked them up. That was equally as good. And now I'm hungry!
